Pop’s Patties
Whenever I don’t know what to make for dinner, the answer is always salmon patties. Easy, quick, and so, so, so delicious.
Ingredients:
1 egg
2 cans of salmon
2 Tbsp of mayonnaise
1 cup of panko breadcrumbs + more for coating
Olive oil and ghee for heating
(Makes around 8 patties)
Directions:
Heat a medium skillet over medium heat. Add enough olive oil and ghee (about half and half) to coat most of the bottom of the skillet.
In a medium bowl, whisk the egg.
Add the salmon and mayonnaise to the bowl and mix until well combined.
Add about 1 cup of the panko breadcrumbs and stir until evenly incorporated.
Pour extra panko breadcrumbs into a shallow dish or plate.
Shape the salmon mixture into 8 equally sized patties.
Coat each patty in the panko breadcrumbs, pressing gently so the breadcrumbs stick to all sides.
Transfer the coated patties to the hot skillet and cook until the bottoms are golden brown (about 4-5 minutes).
Flip and cook until the tops are golden brown (about 4-5 minutes).
Remove from the skillet and enjoy!
(Any leftovers should be stored in the fridge and consumed within 2-3 days)
