Homemade French Fries

Tonight I made my classic homemade french fries. Gather up the needed ingredients and head to the kitchen:

  • 3 good sized potatoes
  • 6 slices of bacon (or as desired)
  • 2 cups of cheese (or as desired)
  • 1 avocado
  • vegetable oil

Step one is to heat up the oil in a nice frying pan. You’ll want to have a nice 1/4 to 1/2 inch layer so your fries aren’t completely covered but have a chance to breathe. Leave the stove on a medium-low setting so the oil doesn’t over-heat and explode when you drop the potatoes in.

Step two is to wash and cut up your potatos. You can peel the skin off or leave the skin on. I prefer no skin on my fries so I just cut the skin off. This saves time if you’re not very good at peeling. Then wash the raw potatos and get out your sharpest knife if it’s not out already.

I like to start by cutting the potato in half lengthwise. This lends to having longer fries and looks alot better in the end. Once you have the two halves, chop the pieces lengthwise into french fry shaped pieces.

Three good sized potatoes should make a plate worth of fries that will feed one or two people (as a meal) or two to four people as an appetitzer.

Each potato should fill the pan. After the first batch is frying, shred your cheese, cut up your avocado, and have them ready. Cook the potatoes until they start to brown (golden brown that is) and flip them over for another two minutes.

After you have the first layer, add half the cheese, then put the next two layer of fries on top, then followed by the final layer of cheese. If your fries aren’t hot enough to melt the cheese, throw the whole plate into the microwave for 15 seconds.

Add the avocado and eat!
